Q. During the walk through, the county mentioned that they could award the food service portion of the RFP separate of the County Café and Coffee Kiosk.  Are proposers required to propose a solution to both?  If a proposer does not bid on the County Café and Coffee Kiosk, will that be considered in the evaluation criteria?

A. Proposers are not required to propose a solution to both.  Lake County reserves the right to award to one or more Proposers if determined to be in the best interests of Lake County.  Award shall be made by the Lake County Board to the responsible proposer determined to be the most advantageous to the County.
 

Q. Does the county see any juveniles from time to time and what is the expectation on a juvenile menu, if so?

A. N/A.  The County Jail does not house Juveniles at any time.

Q. Does the existing vending or commissary contract preclude a self-service market being utilized in the café with pre-packaged foods and drinks?

A. No

Q. What was the revenue for the Café for the last 12 months?

A. $168,000

Q. What was the revenue for the coffee kiosk for the last 12 months?

A. $112,000

Q. What was the customer count for the Café for the last 12 months?

A. Average per day is 151

Q. What was the customer count for the Coffee Kiosk for the last 12 months?

A. Average per day is 147

Q. What was the average customer spend for the Café for the last 12 months?

A. $5.36

Q. What was the average customer spend for the Coffee Kiosk for the last 12 months?

A. $3.40

Q. Will the County allow the winning vendor to utilize the county’s network for a point of sale system?

A. Yes.  Currently the county network is utilized for the credit cards, as well as a computer for kitchen staff. 

Q. Is Starbucks coffee a requirement in the coffee kiosk?

A. The County is open to hearing of alternate brands that might be utilized at the coffee kiosk. 

Q. What calorie level menu is required for the inmate meals?

A. The current calorie level is 2800 calories per day. 

Q. How many milks per day/week are required for the inmate meals?

A. Milk is usually provided daily for the breakfast meal.
